I was just wondering, is it possible to use the vm8201 as just a general purpose controller? and if so, is there a pinout for the ribbon cable so that I know which pins access what?

I can’t find a pinout of the vm8201.
However, for the pinout I would suggest you look for the diagram of the controller, as the vm8201 is connected to it 1:1.
That should give you the correct reading of the signals/pins.

What do you want to use it for?
This is not “controller”. Only LCD display, encoder, SD card socket and level shifter
