This optical encoder uses serial (12 or 13 bit) output. It is not usable with the VM140/K8061 due to the clock speed specifications. The max clock period for this encoder is 20us. beiied.com/PDFs2/H25_Absolute_Encoder.pdf
This parallel output 8 bit encoder is usable, but you can connect only one encoder per the VM140/K8061 card. - Or you have to build a multiplex circuit to switch between the encoders – not an easy solution… beiied.com/PDFs2/8_Bit_Absolute_Options.pdf

You may use the eight analog inputs of the K8061 card to connect eight encoders to the card.
You can use the voltage output.
Connect the OUT to the analog input of the VM140.
Connect the GND to the GND terminal of the VM140 input.
Remove the jumper caps from the pin headers AD1, AD2 etc. on the VM140 card.
