would like to set to scope up to capture a a 2.5 volt spike - can you advise if I can set a trigger to catch this single event - it may take 30mins.

That should not be a problem.
Set the scope to ‘NORMAL’, adjust time/div, V/div, slope and trigger to the desired level.
