The info you are looking for is deductible from the document in general, but is clearly illustrated in FIGURE 17.
So you need to replace C2 with a resistor of 10K, and wire the switch between the pad for the touch pad and circuit ground.
In this kit it would be worth trying connecting a potentiometer (and a smaller value resistor) instead of R1 to get you a possibility of regulating the time. Let’s say a 500k pot with 1K resistor - this gets you a timing array from 0,5 second to approx 4 minutes).
That kit is very nice, and a good starting point for learning about this wonderful chip.
Mind you, I am still a beginner in electronics, so I am not 100% sure about it, but it is worth a try.
