Would it be possible to use this device to automate the turning on and off of car headlights?
Is there anything i would need to watch out for?

In theory, that is possible, however, as you are new to all this, we do not encourage you to implement this in a car. Improper wiring can lead to dangerous situations, loss of warranty, lock-up of the car electronics and even fire.
