In principle this is OK.
The only problem is the input offset voltage. Typical value for the TLV274 is 0.5mV.
If you are using gain 2000 this causes 1V error to the output.

If I understand the data you provided correctly, 1 V output error would not be a problem if I were to measure only difference in voltage between analog input 1 and 2 - two calibrated sensors of the same type?
Please note, the offset may be different for the analog inputs 1 and 2.
Please note also the 0.5mV is typical value, the max. offset is 5mV.
