I have just purchased and assembled the K8005 with its supplied stepper motor, it works however the voltage regulator is overheating.
Is there any reason for this?

A couple of possibilities:
Input voltage is too high.
There is a problem with the rectifier bridge
Regulator has been mounted inverted.
Something downstream of the regulator is drawing too much current.

yes something was drawing current, one of the solder connections was dodgey.

Is it possible to connect other stepper motors (non-Vellerman) to the K8000 & K8005?
We require at least 5000 steps for a future project
Most likely yes, however we do not have experience with different types.
Make sure power consumption is within specs.
