Normally it is linear but be extremely carefull because the signals on the potmeter are connected with the live of the mains! Use preferrably a plastic potmeter (with a plastic housing, not a metal one).

Yes, this should be possible: put a normal (not low current) LED in series between R1 and T1, R2 and T2, …
Again: on this LED will be 230 Volts… Be extremely carefull and use a plastic LED holder for mounting them on your front panel.
