Here i go i have been using vertex k8400 for years now and in the middle of a print ERROR:MINTEMP accured and from that point my nightmare begun.
First of all i changed thermometer cuz thats the first thing that came to my mind but no luck error was still there. Then i tried with extruder board and everything seemed fine nothing burnt and solders on it seem fine anyway i resolder them but no luck there ether. So i have checked mainboard and there isnt anything unusual there.
And then after few restarts and playing around it could work for a few minutes normally but then again it would go back to error. I am all out of ideas now and it would be great if somebody could help me out.

you are running the K8400 with a heated bed?
So check your log-File from whatever server you use where the min-temp error comes from. The firmware is quite informative in case of errors.
And from the picture it looks like your error is on the temperature sensor for the heated bed.

Sorry i didnt mention but there is no heated bad and its only single head.
O. K., then you should re-program your firmware. The photo you provided is showing the LCD screen for a configuration with heated bed. If this is missing, specially the thermal sensor, then you will get an mintemp error.
Please check in your file “configuration.h” the following line:
#define TEMP_SENSOR_BED 0
Any other definition would make trouble. Then re-compile the firmware and transfer it .

I tryed you first advice to connect pc to printer (i only used sd untill now) and this is the error that i got i hope this could help you understand my situtaion better.

And i updated software like you said now i dont have that temp in the right top corner but the error is still there.
For some reason it shows that temp on extruder is 0/0 but i force it to print sensor will start working normaly until head starts moving and i get the error that i have shared here. To me this looks like some kind of short cicuit or something on those lines.

the temperature reading 0/0 is indicating now a hardware issue. This means, that the temperature sensor is not correctly connected (open circuit). Maybe there is a broken connector or cable, since the error will appear when moving the print head. I believe that you should look after some mechanical issues now.

Just wanted to let you know and for other that have same problem how to fix it. Looks like the connectors on the right side of the extruder board were damaged somehow (btw i think i had problems with it from the start now prints are smoother and better overall) i just switched place to second extruder place (cables that connect to motherboard too) and now it runs better then ever before.https://ibb.co/gMPLhS
