Using Velleman K2636 for upgrade of sewing machine con

I was looking to use the K2636 to upgrade my old Necchi Supernova (1963 Italian sewing machine) speed control. It currently uses a brushed ac motor and a foot rheostat. The carbon rheostat gets hot at low speeds and I am not getting the current I need at this low speed to do my work. I am wondering if this control circuit would be able to change the speed output fast enough? I would be changing the speed pot to variable resistor (foot pedal, if I can find one). It would be mounting this all up in aluminum box under the machine perhaps.
