how do you set the input amplification to 3 ?

On page 10 of the manual there are instructions how to change the gain.
If you want a different gain factor you can calculate it quite easily using the following formula :
Gain A1 = 1 + (R10/R8) Gain A2 = 1 + (R11/R9)
R10 = 10k and R11 = 10k are on board.
To get gain 3 you have to install R8 = 5k and R9 = 5k.
(Nearest value in the E24 series is 5k1.)

Do velleman sell a module i can program so it can carry out its own subroutines when instructed to by the pc?
There is no such module currently within the product line.
